oat-o-licious

Recently I came across a Pinterest recipe that has stolen our hearts. It’s simple yet satisfying. One day I was craving a Snickers and decided to try and find a recipe for something I could make without a trip to the store for eggs… which would have inevitably led to me purchasing desired Snickers and a slew of other items. I came across a picture similar to this one and to be honest I was critical. Isn’t half the fun of baking the pretty end result? I thought it looked like Rice Krispy Treats except it’s made with oats and no butter. (insert raised eyebrow) It seemed like a why bother or why not make Rice Krispies.  But necessity is the mother of invention, or at least the motivating factor in my willingness to try a “healthy” treat with a wrinkled nose face of doubt and a back up plan to make a Snickers run if needed.

Melt 1 cup of peanut butter and 1/2 cup of honey. (I used Agave but I also think maple syrup would be a win)

This step literally takes two minutes. Take a breather if you need to. Otherwise pour 3 cups of oats into a bowl.

Now for the hard part. Combine. (I also add chocolate chips, except for this last batch we were sadly out)

Next pour combined mixture into a pan. I swiped beforehand with a bit of butter so it wouldn’t stick… or most likely because I love butter and it seemed like a reasonable thing to do. Next grab yourself some wax paper and squish it all out into the pan. (Yes, squish but you may say flattened if you feel that more appropriate) Then you pop that bad boy into the freezer and wait ten or so minutes.

As Garrett puts it, “Eat as desired and weep with joy.”
